When many people think of ‘Italian food,’ they imagine garlic rolls, spaghetti, pizza, calzones, cannoli, and so on. It’s an absolute tease for diners who aren’t able to eat gluten — so much delicious food that’s forbidden to them. It just doesn’t seem fair, and as a result, most-gluten-intolerant people avoid Italian restaurants, even if they love the cuisine. Luckily, Pinocchio’s has the ultimate gluten-free solution!
Surprising to most, Italy is among Europe’s top nations to be visited by those with gluten sensitivities. Why? Because Italy has been familiar with Celiac disease for longer than the United States has, and their Celiac association — Associazione Italiana Celiachia — estimates there to be around half a million people in Italy with Celiac disease. As a result, Italian chefs have had to make a compromise.
Only on the ingredients, though. Never on the flavor.
That’s why, when you or your gluten-intolerant friends come into Pinocchio’s and order one of our many gluten-free dishes, you can expect them to taste as good as the original.
It’s commonplace that when deciding to go out to eat, the choice in restaurant often falls upon the person with the most restrictive diet — no one wants to be responsible for limiting another person’s enjoyment. This is how Pinocchio’s ended up a favorite of not just gluten-sensitive individuals, but also their friends and family. Diners with gluten intolerance don’t have to feel disheartened or excluded when they look at our menu – our long list of gluten-free substitutions includes linguini, pizza shells, ravioli, hogi rolls, and desserts. One caveat: It is important to note, however, that our kitchen is not exclusively gluten-free, so there is a possibility that trace amounts of gluten may be found in otherwise gluten-free items.

If any Italian sauce isn’t simply mouthwatering and unique to its chef — gluten-free or not — that dish is not worth its salt. So, just because an Italian dish is offered gluten-free on our menu doesn’t make it any less traditionally Italian. The integrity of the culinary art and the pride in its authenticity are still intact, and all of the flavor and charisma of any good Italian meal is still there.
