What is a Calzone?
Originating in Naples, Italy, the calzone is a delicious Italian dish that can be enjoyed as an evening meal or as a sandwich. Similar to a folded-over pizza, the calzone is typically made with a pizza dough base. They can be large or small and, once the base is rolled out, the calzone is filled with ricotta or mozzarella cheese and topped with meats and vegetables.
After the savory ingredients are added, the circular shape of the dough is folded over in half to form a half-moon shape. The edges are sealed, usually by pinching or rolling the dough closed. Calzones are either baked or deep-fried. Once cooked, calzones can puff like a pastry or turnover.
A calzone often does not have marinara sauce added to the inside but, instead, the calzone is dipped into the sauce while eating.
What is a Stromboli?
Dating back to the 1950s, the Stromboli is actually an American invention! While there is some discrepancy as to how and where it got its name, the Stromboli is named after an Italian movie (of the same name) directed by Roberto Rossellini and starring Ingrid Bergman. While not a huge theatrical hit, the movie did stir up scandal between its director and lead actress!
Not unlike the calzone, the Stromboli is built upon a pizza dough base. While the original Stromboli used bread dough, pizza dough is now more commonly used. Toppings always include cheese, usually mozzarella, and Italian meats (e.g. salami, capicola, pepperoni, etc.) or vegetables.
Once the pizza ingredients are added, the dough is rolled up, not folded in half. The resulting shape is like a rectangle. Because the ingredients are rolled throughout, the Stromboli also resembles a jellyroll. The Stromboli is most often baked but sometimes deep-fried.
Unlike the calzone, a Stromboli has the marinara or pizza sauce added to the ingredients as the dish is built.
